A little advice please on current prices. Our PTA has a large summer fair where we have food and drink vendors. They have been charging 15% of their takings as the fee for many years. The same food vans come most years. Everything is costing a lot more this year to put on and so we are thinking of increasing this to 20%. Could I get a guide on what others charge please of those that take % of takings (we have agreed no fixed fee as some food vans do considerably better than others)
