Do carrots freezer well for the purpose of roasting them or do they change texture still like it you just dice and freeze them? I don't like frozen carrots to boil but I've never frozen then honey roasted them. Has anyone tried it? I bought ready made frozen parsnips and roast potatoes one year. Never again. They were awful.

Yes. Carrots and parsnips blanched in batons then roasted. Tasted alright to me cooked from frozen. You might be more discerning.

We use ready frozen carrots from the supermarket all the time and they are fine. Just don’t boil fo too long as they go a bit soft. We also store and use frozen peas as most people do. Green beans and sweet corn are ok as well but I find frozen broccoli and cauliflower to be a bit too mushy for my liking.

I only use the brocolli and cauli in something with a sauce as they are too mushy otherwise. I freeze my own for cauliflower cheese.

It's just the carrots and parsnips I wanted to do from the freezer. Maybe I should Blanche them first?

If you're freezing your own you should absolutely blanche them before freezing.
