Fruit storage not in freezer

Blackberries, elderberries and apples are just coming into season here. I am wondering what recipes I can use to preserve which don't involve freezing as our freezer is full of other stuff. Generally I would just freeze and extend the crumble season.

I have some tins, a few bottles. We probably wouldn't drink wine.

Some great ideas. Not sure if the apples will be nice enough for dehydration, we would have to do it in the oven. New house so don't know what they will taste like in a month or two.

Leather and jam would definitely go down well. Would you combine them or have them separate jams? I don't like chutney but dh might.

Elderberries good for immune system, could you make elderberry syrup? Use it as you would that Sambuccol stuff as in a spoonful a day over winter or several times a day if you start with a cold/flu? I made rosehip syrup a few years ago, same idea as full of Vit C

I have been given a box of cooking apples and will have loads of dessert apples from our trees this year so as well as the usual chutneys will do apple and onion relish and giving apple butter a go, apparently you spread on toast, have a few others bookmarked so will post later

Jams or jellies. At least half of my redcurrant crop gets converted into redcurrant jelly. It's high pectin content makes it ideal. I also make Raspberry jam and may make a mixed berry one this year if we get a glut of blackberries. I tend not to add too much sugar so my jams are cloyingly sweet.

Update: made apple butter today from my Thane Prince Jams and Chutneys book and it is so good. Can see me spooning this onto Greek yog and stirring into porridge with some dried fruit plus serving along side roast pork, chicken, turkey. Worth giving it a go if you like that kind of thing and you have enough cooking apples.

Mum makes apple and ginger jam with any apples we can scrump. I make blackberry jam with what doesn't end up in my tummy (only what I forage so not huge quantities) and I have never used elderberries personally. Although I like an elderflower cordial and I have used that with gooseberrys. (don't know if they taste the same flower and Berry)
