Waxed cheese

I’ve just bought some waxed cheddar for Christmas and noticed the expiration date on it is May 2019. I’ll hopefully stock up in Feb and March in prep for Brexit, as our freezers will be aimed more toward meats (not the only source).
Is anyone thinking of stocking up on this or indeed getting into waxing your own cheaper cheese?

I've seen about waxing cheese but I kind of filed it under "I'm doing enough ". But it is tempting. Interested to hear what others think.
I'm going to shove some cheddar in the freezer and already have some powdered but I am intrigued ......

it a best before date, not used by.

not sure where it is, but there is link to a very long explanation on how they come up with best before dates, it's along the lines of if a slight difference in taste/texrure can be detected.

If it's something like cheddar you are thinking of storing, it might be better for you to look at information on how to make cheese & see if you can created the correct conditions for storing cheese to mature.

e.g. mild cheddar is about 3 months old
medium is about 6, mature about 9, extra mature about 1yr & vintage around 18 months.
So, if you like mature cheddar, store mild cheddar for 6 months & so on.

If you freeze it, the texture changes but mild cheddar will still be mild when defrosted.

Yes I’m going to look into making cheese (I’ve given soft cheese a go before) but it is so much to add to an already long list.

I know the date is advisory, I was merely explaining that what was available now has a date of May.

I didn't even think of waxed cheese, good idea! Might lob a couple in the stash!
