Vegetarian / Vegan Batch Cooking for when baby arrives

I wanted some inspo on veggie batch cooking, so far I've done:

  • Vegan Lentil Cottage Pie with Sweet Potato Mash
  • Vegan Bean Chilli
  • Veggie Lasagne
  • Vegan red Thai curry

Or even recipes you can share, that'd be nice! Thank you x

I made it the other day for the first time and it was so easy and delicious, will definitely be batch coming it before baby.

Also, leek and potato soup is on my list to make. Again, very easy and filling.

Sounds like you're on it! I suggest:

  • vegetable soups
  • sausage and bean casserole
  • 'fish' pie (using smoked tofu)
  • falafel (make a big batch to freeze, then add to cous cous/pittas etc)

That all sounds delicious. I made up root veg stew packs that I could just tip into the slow cooker.

I would make up a batch of mac and cheese sauce and a tomato based sauce (vegan or veggie) so you can just cook pasta as needed :)

Nice! When did you start batch cooking if you don't mind me asking?

I'd add a couple of soups and some veggie curries eg chickpea curry.

Also something cheesy like a mac and cheese or pasta bake?

I made big batches of tomato sauce for pasta, have found that really helpful! I also did some pasta bakes, a sweet potato and peanut butter curry, and daal.

quiche
macaroni and cheese (with some leeks and kale in it)
mushroom bourginon
Nigella supper onion pie
veggie sausage casserole or Jamie O's sausages and tomato bake (with veggie/vegan sausages)
creamy veg pie
satay curry with quorn/tofu
butter paneer curry
veggie fajitas or black bean and butternut squash taco filling (can freeze as burritos too)
broccoli cheese
veggie meatballs in tomato sauce
quorn mince in chilli soy sauce with cashews

That all sounds delicious OP. Our friends made us some veggie tagine, which was delicious! this looks about right: www.bbcgoodfood.com/recipes/vegetable-tagine-almond-chickpea-couscous
but the chickpeas were in the tagine itself. Really quick to make cous cous or bulgur wheat to go with it.
