Lemon Meringue Pie - ok to eat?

I'm 5+4 and home visiting my mum and she is making her amazing Lemon Meringue pie, but I'm not sure if I'm allowed it! I've had a look at the recipe, and the lemon curd is cooked until it bubbles, so that should be ok, but I'm not 100% about the meringue topping. It's made with 4 egg whites, whisked and spread on top of hot filling, then baked at 180c (gas mark 4) for 20mins.
It'll still be soft in the middle, but heated through definitely, so I feel like it should be ok...
Thoughts?!
Man, I'm hungry... Smile

I'd eat it. In three pgs, no one ever told me not to eat meringue... Mayonnaise, yes. Meringue no. Has anyone EVER got food poisoning from meringue?

Am entirely certain that the pg police will be out in force to tell you your baby will be irrevocably harmed by lemon meringue pie, but I'm for eating. Grin

Go for it, it will be fine and sounds very tasty

If you are concerned then just ask your mum to pop the lemon meringue pie back in the oven for another 20 minutes on low heat - so the top doesn't burn.

I was getting nervous about eating pancakes the other day.... Smile

I think we all see the raw eggs and panic Smile

Hehe, thanks. She's going to cook it a little longer than usual so that its quite firm on top, I agree, I've never heard of anyone getting food poisoning from meringue. It is just soft egg wibbles.

Raw eggs are actually fine as long as they have the lion mark on them as it means the chickens have been vaccinated against salmonella. So I'd definitely eat it!

Oh eat it. There are so many things you can't, I wouldn't cut out something like meringue (unless you're diabetic). Oooh, could really go for lemon meringue pie.

I'd eat it. Good for you!
