How should I react when I catch dd in the act of pooing her pants?

I am currently interrupting her mid-poo and making encouraging her to sit on the potty.

The result is that she does half a poo in her knickers and then won't finish it on the potty so does some more in her knickers again 20 minutes later.

We end up getting through so many pairs of knickers and she is getting stressed out and upset about pooing.

So if I see her pooing her pants would it be better to just let her get on with it and, when she's finished doing her business, just throw the dirty knickers in the bin with a "never mind"?

I had similar with my daughter, she would hold for days too.
Tonnes of praise and rewards finally did it, she used to like me to sit in the loo with her and read, I used to find an excuse to pop out after a few minutes and she would generally do it then.

Was a painful period though, hope this helps.
