Hypothetical question: Sabbath/Ramadan in the Artic Circle?

Ok, so if you're Jewish or Muslim in the Artic Circle, how do you keep Ramadan or the Sabbath, particularly at the tricky ends of the year?

Well I believe you can announce Ramadan by hearsay, ie if you haven't actually seen it but your friends down the road have?

So perhaps they can stretch it a bit and phone a friend in another country?

I mean, how do you do the fasting, how do you do the sun-up to sun-down portions of the Sabbath or Ramadan, if you're living somewhere that's in permanent daytime or permanent night?
