... it is right to say

"I have eight years' experience' or 'with eight years' experience'

or don't I need the apostrophe? eek!!

"I have eight years' experience" sounds better to me (and, yes, you do need apostrophe) but it depends on overall context of the sentence.

"of" would solve the problem wouldn't it! I've been putting the sentence in my CV and have thought aha a lovely apostrophe, that'll impress them but now I am a bit worried it looks wrong (even if it isn't!).
