If you don't know him I would send a bottle of champagne (though check if possible that he drinks)
Anyone normal would be thrilled (and if it's a woman, same goes for a lovely bouquet). It doesn't last, so it's done with soon and doesn't add to their clutter and there's not a risk you're sending them a book/CD/etc that they don't like, or that they have already.

Amazon voucher? Men usually aren't that bothered about carefully thought out pressies IMO - prefer to chose something they want . Doesn't have to be much dosh either...
