Mums birthday Wednesday 6 adults and 3 children getting together weather not too bad so could be outside.

Was going to cook a Sunday dinner but now meeting on a Saturday so want something a bit more relaxed.

One diabetic , one 7 year old who is asking for pizza 🙈 I'm stuck for ideas everyone is suggesting we buy in but I'd like to make a bit of effort but relax a bit.

Roast two chickens, serve with some lovely bread, salads and coleslaw. Get a nice pudding.

Pizza is a great idea, and you could do a load of chicken drumsticks, spare ribs and sausages (plus whatever for any veggies). Loads of salad, couscous, French bread, coleslaw, new potatoes etc. You could buy in desserts or do something with strawberries. They are coming in the shops now, and I saw some lovely ones yesterday.

Sort of a semi-barbecue type affair.

We did this for a birthday last Wednesday, ordered in a couple of pizzas, I cooked chicken and macaroni cheese. Coleslaw and salad available as well.

Go for something your Mum really likes- quite traditional is good for a birthday- a roast, Sheperd's pie, chicken tikka masala, if she's a curry fan- you can tailor to your skills and budget.

Yes as pp suggests go middle eastern.

Heap of shredded spiced pan cooked chicken

Tomato salsa, red coleslaw, yogurt dip, cheese and salad with a big pile of wraps. faklafel hummus etc.

You can buy flat breads that are garlicky/cheesy and add some diced tomato to make it pizza-ish or buy a couple of posher pizzas to add to the above.

Avoid pizza. Terrible for the diabetic, and more a Saturday night kid's dinner than a special meal for an adult's birthday treat.

I would do a couple of pizzas, a big pasta bake with wholemeal pasta and a salad, extra protein for the diabetic if they need it, maybe some garlic bread. People can help themselves to whatever combination they fancy.

Again, awful gor the diabetic who should be avoiding bread bases and pasta (even wholemeal). Plus not a really special treat meal.

You really need to avoid carb heavy dishes for the diabetic.

I'd choose something like a whole poached salmon, personallyf

I’ve been catering to a diabetic for years and a whole meal pasta bake and salad should be absolutely fine if they are controlling their sugars well. They don’t need to eat the pizza just because it’s on the table.

It's really not a good or healthy meal for a diabetic. I'm diabetic and simply couldn't eat that apart from the salad. Diabetics need low carb diets. Your suggestions are very high carb, and hence not suitable.
