How do I serve food on those big silver platters

I am hosting a buffet lunch for a family celebration.I have bought some of those serving platters- the disposable kind.How do I serve the food on them? Should I layer napkins or doillies on them? Or do any of you lovely ladies have a more elegant idea?

What I tend to do is buy a cheap bag of mixed leaves - preferably the green and dark red, frilly edged sort - and some cherry toms (Lidl is your friend here!) and, having placed the food in the middle of the platter, tear up and tuck in bits of the leaves around the edge, dotting with the tomatoes. Our in-house caterer in work does this with sandwich platters etc, which is where I pinched the idea from, and it looks really nice!

Alternatively something I've seen (but never tried out) is, if you were doing fish, slice lemons very thinly and layer them around the outside.
