I think we will have approx 16 at DS's party. Is it madness to do a pass the parcel for that many? Do I do 2 rounds, with 2 parcels, or one giant parcel for all of them? How on earth can I keep track of who's opened and who hasn't?

I'd like to just abandon it altogether, but DS is adamant that all parties MUST have it.

you can have more than one parcel going round the circle. Or split into two groups.

Cheat, and ask who hasn't the the parcel yet to put their hand up. I found 2 parcels in the same circle really hard to make sure everyone got to unwrap.

Just keep it very short, stop it every couple of children.

I usually have two parcels and do half the children at a time and have lots of toys or other activities for the other half of the kids. Another game you can play is just have one layer of paper on the parcel (or pass something else like a soft toy) and when the music stops that person is out and they get a sweet and go off to play, until there is only one person left - I like that game as I hate wrapping parcels!

To keep tabs once they have opened their layer they leave the circle.
I then had pin the tail/nose for them to go to once they were out.
So easy, as they come one at a time for pin the ... game.
Under 7s only after that age, only put sweets in the layers and hey they don't all get a go or some more than once.
They are older and need to understand - that is is a game of chance. Porbably would offer a sweet at the end to all those who missed out.
