At my wits end- fussy eaters

My children have been fussy eaters from the start, and now at age 8 and 6 I'm really at my wits end. They are both super slim and I worry so much they're not getting all they need from their food. (I've just ordered some pediasure to help bulk them up a bit) but obviously I'd rather they got this from food.
The youngest will eat any meat put in front of him, and will eat fruit, but refuses all vegetables, salad, pasta, rice and potatoes unless its waffles or fries 🤦🏼‍♀️
The eldest will eat some veg and salad if served separately and plain, but not keen on meat. Will eat a little bit of rice or pasta - again if served plain.
I end up making mine and my husbands tea separately and then they have a picnic of the foods they will each individually eat but as they both refuse to eat anything in sauces etc they don't get what i would call good hearty meals. I'm just at a loss of what to do 😟 the youngest refuses to even try things.
