Tips on how to evaluate in both essay and exams because i'm going to cry/lose the plot/never get anywhere if I don't get ther hang of this soon

I just can not get to grips with evaluating.

I'm studying sociology and psychology which involves lots of evaluating and I just do not understand it, I just end up writing a bullet pointed list of strengths and weaknesses

Please can you give me some tips on how to evaluate.
