Hi,
I often cook carrots with the mince and onions, mash on top then grated cheese, pop in the oven for a lovely golden topping.......yum! My trio have to have yorkshire puds with it!

To my mind, one of the advantages of Shepherd's pie is that it is a one pot meal. It already has veggies in, so you don't need other veggies with it. Of course, having extra veggies makes it healthier.

mash on top then cheese- delicious. i also add carrots, peas, onion and mushroom to the mince. Also do that when I'm making mince and mash
