Anyone (or spouse) ever retrained from scratch eg plumbing, plastering, IT?

Keep seeing ads for shortish courses almost guaranteeing jobs on finishing and wondering if there's any truth to them. DH is very miserable in his customer service job so I'm trying to help him find something new (he quite enjoys plastering).
Any experiences much appreciated.

yes, i did an IT course. was a musician before. can't really help as i did it a long time ago so it's not applicable anymore...
