My DS (also 15mths) loves pasta though manages better with penne than spaghetti!!
Its one of our staples and can be done with - bolognese sauce, tomato and cheese sauce, etc.
Our quickest recipes are:

Stick one salmon steak in oven with butter and lemon juice for about 15-20mins, mash up and stir into pasta with veg of choice (that does feed DD who's nearly 4 as well!)

Cook pasta, stir in cream cheese and some ham and veg of choice.

my DDs are nearly 3 and 16 months. they eat pretty much the same foods now, i just tend to cut DD2's up smaller
lasagne
spaghetti or any pasta bolognese (bulk cook, pots of bolognese always in freezer!)
sweet potato, cheese & beans
wholemeal pitta breads with humous and grated carrot / ham / chicken etc..
fusilli pasta with tuna & tomato/veg sauce
broccoli & cauliflower cheese with fish fingers

get yourself an Annabel Karmel book -they're good and very easy to follow.
