Ideas for where to eat in Manchester, please !

A friend is looking for somewhere 'special' to eat in Central Manchester to celebrate a special occasion.

Her mum is quite conservative (wouldn't be keen on African/Mexican type stuff, or Greek as that would be coals to Newcastle) and 2 of them are veggie.

I told her you guys would be sure to have some ideas so help please !!

Hmm, I'll get my thinking head on. Trouble is, never eat anywhere 'special', more cheap and cheerful. Can think of Simply Heathcotes off the top of my head but will ponder more.

What about Chinatown or would that be too exotic? The Yang Sing?
