that you can recommend for me to eat at lunchtimes, i'm at home and i want to get healthy!

have just managed to cook and eat a salmon fillet (thanx mumsnetters) and need some other ideas now!

soup. I'm not a big veggie eater but I adore soup in virtually every guise. very easy to make too - boil some potatoes, fry some leeks, whizz it all together - ideally with some vggie stock add some salt and pepper. carrot soup too - boil, whizz, add chopped coriander. you can pretty much make soup with whatver you've got and its so easy. and as long as you don't laden it with cream (though the odd dollop won't hurt) and salt, it's healthy as it comes

similarly making the effort to chop fruit up, or make a fruit salad, somehow makes it more appealing. don't ask me how - it just does!
