Planning family holiday abroad...is late booking too risky first time

We are a family of 6 all the children are above the age for child discounts (3,6,8,10) we are hoping to go to the algarve in June/July next year.I am wondering what peoples experience is with late bookings I mean would you get more for your money last minute,does it mean you get the dregs of holidays?are you better to know what you are getting into by booking well ahead?I am quite laid back and don't mind flying by the seat of my pants so to speak so don't feel afraid to book last minute I am not sure DH feels quite the same he wants to book ahead.....any tips welcome xxx
