Safety and law regarding side facing seats and children

Does anyone have any advice or links to websites that will ansewr my queries as i have trawled and trawled through information and still do not really know what to think!

I drive a Land Rover Defender 90- which is a neccesity for a number of reasons (live on property only accessible via rugged 1 mile track, impossible to negotiate on in anything other than 4x4 after heavy rain etc, tow and launch boats etc etc) but I also have to use to drive my 4 and 5 year olds to school and activities. They sit in the rear of the vehicle with inertia(sp?) lap belts ( as side facing seats) Having read all the info regarding booster seat law I am confused. Nothing seems to mention use of booster seats in side facing vehicles. One site said booster seats should never be used in side facing seats but gave no reason!
Please, if anyone has a vehicle similar to the Defender with side facing seats, what do you use and do you have any links i can study. Even a phone number of some authority I would gladly call to get confident and correct information.
I know I could get a 4x4 with 'normal' seats but just would appreciate any info anyone in a similiar position may have.
TIA

lol - yes was afraid to post considering current 4x4 climate but thought someone may admit to having something similar with helpful info! Every other car I pass is a Defender here in Devon so hoping someone must know
