A shameless rip off, of the longstanding chat thread. But i never like to post on it as my diet swings between really weird stuff 😂 and a lot of junk or skipping some meals due to sensory issues and I don't like the mumsnet food judgement, so was hoping we could have a mini nd friendly thread on here!

Today has been a mega junk (and crying day!) and I always turn into a carb machine when I'm down 😂

Breakfast - beans on toast
Lunch - pasta with tomato sauce and tobasco, a family bag of (delicious) salted crisps, chewits, crunchie and a can of lucozade😬
Dinner - I have put some rice on and plan to have kimchi and cheese rice with some peas to get something vaguely green and healtht in 😂

This could be fun and fascinating!

Breakfast: Black bean burrito with cheese and spicy pepper
Lunch: emergency grabbed out the freezer after boiler guy finished, mushroom truffle pasta and sweetcorn, more cheese!
Dinner: Roast butternut squash and tomatoes, GOSH mini sausages, leftover couscous

That was a bit un-colourful!

Tired2tired · 04/11/2022 10:07

mushroom truffle pasta sounds intruiging! I too am a fan of a breakfast buritto!

The truffle past is called Satchettini or something similar, it turns up in the Lidl Deluxe range every so often, probably will for Christmas.
I like that you enjoy breakfast burrito's, I hope this thread would take off and see we are not alone in our sometimes unconventional choices.

Yesterday breakfast: Porridge cooked with prunes and cocoa
Lunch: Artichoke and potato soup with crackers
Dinner: German style lentils and potato/cauliflower mash
and on the demand of my youngest, bananas and custard!

Today: Fried eggs and miso mushrooms
Lunch: Turkish aubergines, vine leaves, green beans, salad, bread
Dinner: vegetarian Stovies!

Tired2tired · 05/11/2022 16:36

Oh I will keep an eye out for the pasta!

Inspired by you I had a pinto bean buritto this morning with lot of Tabasco!
Lunch was a bounty 😬
And I'm dithering over dinner, I really want an Indian takeaway but its so expensive and a 40 min drive to get it, so maybe some pasta, I'm not really sure what I'm in the mood for!

You're a vegetarian? Same!

I tend to have the same thing every day. Decision fatigue is real. Porridge with protein powder for breakfast, an egg pita bread with broccoli for lunch and a cheese sandwich for dinner. Simples.

Loving the use of tabasco by previous posters - spicy food always tastes great. I'm a non taster tho - so need a LOT of spice to taste anything at all. Wonder if anyone else is either a non or super taster?

Tired2tired · 06/11/2022 08:03

About to go research non taster! As a kid I used to pile salt, pepper, sauces onto my food, but it just didn't reallt taste of anything without lots of salt, pepper etc and now as an adult lots of tobasco etc

Yep, same here. And my dad is the same and also autistic. Could be a hyposensitivity thing I guess

Mostly vegetarian, my husband has been since he was a teen, and frankly I can't be bothered cooking multiple versions of the same thing, and I don't miss eating meat at home at all. Better for the environment, health and budget! So we eat vegetarian within the house. I think it's made our children better eaters as well, as they get to try more unusual things.
But I do occasionally eat meat/fish when we go out, like recently my husbands Aunt took us out for my birthday and his parents wedding anniversary, so I had some then! Especially as it was a present of sorts.

Today... Sunday is waffle day! Home made wholemeal banana sweetened waffles with blueberries and yogurt.
Lunch: stuffed pasta with cream cheese and lots of black pepper
Dinner: Baked potatoes and lentil bolognaise

Tired2tired · 06/11/2022 13:26

That's a bit like me and dh, I was the lifelong veggie and he has turned into it (90% ish!) as it's just easier when we're cooking for each other.

I woke up and all I could think about was rice after watching a documentary on it 😂 I'm so easily influenced the bounty yesterday was my first in years just because they were talking about it in the news (being removed from celebrations)
So I had a pea and pepper risotto for breakfast 😂
Just had the leftovers for lunch and I'm considering having a veggie plov for tea.

It works well for us, I grew up in a farming community, so have great respect for how animals are raised etc and hold high standards for what I will eat, so not eating it is definitely more budget friendly!!

Monday breakfast: black bean burrito
Lunch: baked potato and baked beans
Dinner: noodles, broccoli, fried eggs

Tuesday breakfast : black bean burrito
Lunch: noodles, spring greens, goyza
Dinner: cauliflower/potato mash, peas, fish fingers

Tired2tired · 08/11/2022 19:31

I have some sheep but they're basically just used as lawnmowers 😂 and their wool for the veg garden compost.

Breakfast, pitta breads with cheese, tomato, peppers and hummus.
Lunch, garlic bread
Tea was pasta and cheese

Going to try and lower the carbs and up the veg/protein tomorrow but we shall see 👀

We had goats when I was growing up, I would love to have them again, but live in a town now, so crazy lottery win dream house includes goats!

Breakfast: Kidney bean burrito
Lunch: sweet potato and butterbean soup, with chipotle flatbreads
Dinner: Mango almond korma, black rice

Whatsleftnow · 11/11/2022 23:07

Oh a good thread I can actually post on. Ok, here goes:

Breakfast: glass of squash, half cup of coffee
Lunch: cup of coffee with caramel syrup, chocolate covered dates, slice of cheddar, 2 cookies.
Dinner: spicy noodle water (changed my mind about the noodles) and half a hash brown. I’m now thinking of getting up and making a sandwich because I’ve realised I’m flipping starving.

WeirdPookah · 15/11/2022 13:15

I made the best Gardener's Pie last night (refuse to call a vegetarian version of shepherds pie a shepherdess pie, sexist and highly unlikely to be accurate!) and had the leftovers for lunch today.

A neat new thing I have discovered for vegetarian cooking, to make it visually appealing when you just don't get that browning of veggie-mince, is old fashioned browning liquid. My children where watching a vegan kids cookery programme, What's Cooking Omari?, and he used it in making jerk jackfruit.
