I thought I would start this light hearted thread after some of the awfulness out there. In my house we always make an effort to make Friday cooking a little nicer than the rest of the week. It's something my mum would do too as Jumuah is the best day of the week.
I have some chops I marinated last night that will be going in the oven and a big pot of a pilau type chicken rice with grated carrots and peppers, accompanied with a Cucumber and yoghurt dip. I'm not a great cook at the best of times but I try and make an effort for Friday.
So lovely ladies, what's cooking today? (Or any other day if you aren't cooking today 😊)

Just flown back from Spain and got loads of recipe inspiration. Tonight is baked beans on toast as I'm exhausted. Going to try a new tagine dish at the weekend though!

Ooh hope you had fun. I don't think I'm brave enough to try a tagine, let me know how it goes for you.

We normally use this marinade for chops on the bbq but it works fine for the oven too I just add a little oil to the marinade

Ginger
Garlic
Salt
Chilli flakes
Soy sauce
Honey
Black pepper

It's simple but my kids and DH like it.

That sounds delicious! Might give it a go... Do you think low salt soy sauce would be ok - DC is kind of 'off' salty things at the moment? (I love soy sauce but DC won't touch it for now)

I love chops @Parkingt111 they sound delish! As does a tagine @Scirocco!
I had meatball and egg curry on Friday. It was nice, made it a bit different to how I usually made it and the consistency was much better.

I'm not a great cook, no good at the science behind foods etc so my foods never turn out exactly the same even if I use the same recipe!

Your Friday is my Saturday. Yesterday I tried to do Spanish style chicken in the slow cooker. So, chicken, chorizo, tomatoes, olives, onion, garlic, cumin and paprika. The problem was that I used only two chicken breasts. The whole thing was soupy but the flavour was good 😊 Anyway, I do love the cosiness of having a meal cooking away whilst I get on with my chores.

I haven't tried it personally but you could always give it a go. I think if they don't like the heavy soy taste then they would be ok with this alternative.

Tried it and they loved it! Thanks! We did it with tofu and then put veg through it. 👍

Making a vegetable mango curry - mango puree, coconut, cashew nuts, spices (ginger, chilli, fennel), amd a little sugar. Fingers crossed...

Unfortunately it turned out a bit too mild for DC's tastes. DH rescued it by tipping a bunch of chilli flakes into it. Need to remember to up the spices next time. (I kind of do most cooking with a 'throw a bunch of things together and see what happens' approach).

I don't know if DC cared, but I thought it was cool.

Sounds delish! My creamy pasta with garlic bread seems quite mediocre in comparison
