What can I make that’s easy

I am exhausted. usually I at least make an effort to make something healthy, but a lot of the time I am living off burgers and chips etc because they’re easy, and I’m putting on loads of weight as a result which isn’t helping at all.

One tin in the oven, so easy

Also one tin in the oven salsa chicken. Basically salsa in the tin, season the chicken with chilli powder and put on top of the salsa, spoon more salsa on top of the chicken then stick it in the oven for 20 mins. Meanwhile, Microwave a jacket then stick it in the oven to crisp up. 2 mins towards the end throw some sugar snap peas in a bowl and pour boiling water on top and add a handful of cheese to the chicken and back in the oven to melt.

Jacket potato and beans.

I had poached eggs on toast for tea, that only takes 5 mins.

If you are exhausted, have you spoken to the dr? It might be worth requesting a blood test to check things like iron, folate, b12 & thyroid are all ok. They can all cause fatigue.

Tuna pasta, jacket potato and beans on toast are some easy classics.

I really recommend BBC good food. I’m lazy as anything and what I do is pick out what I fancy that’s quick and simple enough. Then I order the ingredients online for click and collect. They also have set meal plans if you’re really struggling for ideas.

whatever your meal is, have a small portion and add some frozen peas or frozen sweetcorn - put the veg in a mug (or bowl), pour on boiling water, microwave for 1-2 mins - healthy and quick and goes with almost anything.

Beans / Beans and cheese / egg on toast
We have a sandwich toaster which is easy and I sometimes have things like a brie toasted sandwich with some red grapes on the side I eat together. Also have toasted cheese and ham or toasted corned beef and can add a salad or have fruit after if want to add vit C.
jacket potato , can add side salad - fillings like beans and cheese, tuna and sweetcorn
Salmon, new potatoes and some veg like peas, broccoli
Soup with bread and butter like cream of tomato or veg soup
Boiled egg and bread and butter
Or even the burger instead of chips maybe have with corn on the cob
Fajitas

Another easy thing is thick plain yoghurt, granola, bit of honey and some fruit like blueberries or sliced bananas.

Slow cooker meals put on in the day. I find by 4pm knackered.

Have a look at some of the Gousto recipes.

I really like their Harissa & Himey Salmon and their sticky beef burritos, both take 10-15 minutes. You can make the sticky beef burritos easier if you use microwave rice.
