Anyone have the recipe for west-indian ackee and saltfish?

I have been wanting to cook this for some time but don't really know where to start can anyone help?

Hiya darling.

You've come to the right place.

Do you have the shops around to get your ingredients?

It's really easy to do.

Onions
Tomatoes
Scotch bonnet pepper (or hot pepper sauce)
saltfish (if it's still got bones in it you need to boil it, taste it, if too salty boil again for a shorter period, repeat until tastes right. If it's off the bone and looks like rashers of bacon boil the kettle and pour the hot water over it, leave to soak for 30 mins, pour the water off, repeat until tastes right)

Hot pan, oil. When oil hot add a little hot pepper sauce (or sliver of scotch bonnet pepper... dependant on how hot you want it).
Fry off the onions, you can add sweet peppers at this time if you like. Add tomatoes, add flaked saltfish, cook down. If there isn't any juice get a little hot water (and to cheat a little tomato sauce) and cook it down. Make sure the pot is covered.

Open tin of ackee. Pour off the water, boil the kettle and pour hot water over ackee whilst in tin. Strain, pour off water and shake ackee over the saltfish. Sprinkle with pepper, cover.

Eat and enjoy!!!!!!!!

You can have it with rice, new potatoes, boiled or fried dumplings or harddough bread (yam, banana etc).

I have been craving this for ages. I know where to get the ingredients so that is everything I need to get going now. I will let you know how it comes out.

By the way, you come across as a very warm person. Bet you are a great mum and cook.

I eventually made it yesterday and I thoroughly enjoyed it. I am doing the atkins diet at the moment so I couldn't have bread with it...grrrr. I went wrong before as I would add tin tomatoes, hence very soggy. Thanks it is so quick and easy will defo do it again.
