It's really easy to do.
Onions
Tomatoes
Scotch bonnet pepper (or hot pepper sauce)
saltfish (if it's still got bones in it you need to boil it, taste it, if too salty boil again for a shorter period, repeat until tastes right. If it's off the bone and looks like rashers of bacon boil the kettle and pour the hot water over it, leave to soak for 30 mins, pour the water off, repeat until tastes right)
Hot pan, oil. When oil hot add a little hot pepper sauce (or sliver of scotch bonnet pepper... dependant on how hot you want it).
Fry off the onions, you can add sweet peppers at this time if you like. Add tomatoes, add flaked saltfish, cook down. If there isn't any juice get a little hot water (and to cheat a little tomato sauce) and cook it down. Make sure the pot is covered.
Open tin of ackee. Pour off the water, boil the kettle and pour hot water over ackee whilst in tin. Strain, pour off water and shake ackee over the saltfish. Sprinkle with pepper, cover.
Eat and enjoy!!!!!!!!
You can have it with rice, new potatoes, boiled or fried dumplings or harddough bread (yam, banana etc).
