Swapping to universal credit with a change in circumstance

My partner and I are planning to move in together. He is self employed as of this tax year earning very little at the moment due to it being a new business. I have done a calculator but as I am currently on Income support with child tax credit, child benefit, local housing allowance but my area is now on universal credit, I am confused!!!
Do I declare to separate departments individually when he does move in or do I directly claim universal credit as a couple. How does it work? I know there is a 5 week turn over but if my partner does not early anything for 3 of those 5 weeks, how do I feed my children?Sad they don't make it easy do they lol
