Is it completely normal for perimenopause symptoms to just completely disappear?

It's been quite on-off for a couple of years, mostly just hot flushes, sweats, loss of libido and lack of periods. But I either have symptoms or none at all, at the moment my periods are back to regular and no hot flushes or anything.

as long as you are having periods and possibly ovulating your own estrogen levels will be high. This is enough in many of us to stop all peri symptoms. Many women don't have any symptoms until periods stop for good.
