High fibre low carb diet plan?

Hi, I've discovered that I feel a lot less tired when I cut down on carbs. But I'm finding it really hard to eat low carb without eating way too much protein. I also have two young kids to look after full time and I have ME so meals need to be as straightforward as possible.

Could anyone please recommend a simple low carb but high fibre diet plan? Or some simple pointers to help get started. I'm particularly struggling with lunches and breakfast. Please save me from overdosing on eggs!

I know your post is a few weeks old and I'm afraid I don't have any meal plan suggestions! But I also feel A LOT less tired when I don't eat too many carbs.

I've also been having eggs every day for breakfast!

I think avocados are good as they have a lot of fat and fibre but low on carbs, am I correct? I've also had halloumi for breakfast too.

I tend to just have a bowl of soup for lunch but this is usually lentil, which may not be low enough on the carbs for you. But high in fibre.

Fibre is hard when you low carb tbh.

I'm also intermittent fasting which resolves the breakfast problem but I think chia seed "pudding" is supposed to be good as a breakfast with some berries. Needs to be prepared the night before. But I think is good for fibre and low carb.

I've been doing keto for about 3 weeks and I think it's the limited fruit and veg I'm finding more of an issue than bread etc but also struggling a bit to get enough fats without going over on protein.

I'm having a fibre bar for breakfast, as I was struggling with lack of fibre. This is surprisingly good for getting me to lunchtime. I'm buying The Gut Stuff Good Fibrations peanut butter bar. About 11g of carbs but worth it.

Also for fibre with lunch I have a few tiny new potatoes! Just a few of the miniature ones. It's only about 50 or so grams. Not sure of the net carbs.

Raspberries are great, loads of fibre and relatively low net carb.
