Low cost low carb packed lunches

I need to start bringing lunch to work - preferably cheap! I already eat a lot of beans and am worried that other protein options eg lean chicken will be expensive. Please inspire me!

Why are you low carb, is it for weight loss? Beans aren't low carb and you don't need to have lean chicken, legs or thighs are fine.

Do you have access to a microwave to reheat food?

if no microwave then it’s trickier but tuna/egg salads. hummus and crudités but that’s not very filling!

It depends a bit how low carb you mean ?

i eat salads and as pp said egg, tinned fish and hummous are good. Avacado is nice too but pricey. Oh and cheese. I also add seeds mix to it.
I think it is quite expensive to be honest. Compared to a white loaf and jam sandwich anyway.

To echo PP - beans aren't low carb!

When I was working, I'd often take leftovers from the night before. Just always made sure I cooked a little bit more so there would be something for me to take to work.

I always had a tin or two of tuna in my desk drawer - and a jar of mayo in the fridge (assuming you have access to one?)

Otherwise, bag of salad and some ham or cheese or boiled eggs. Occasionally a ball of mozzarella and some tomatoes, with olive oil on the top - fresh basil if I could get any.

An avocado with vinaigrette, if I could buy/find a ripe one!

Boiled eggs.
Cheese (you can even get individual wrapped small bites of cheese)

tinned fish (smelly but healthy and low carb)
make a tortilla, or even buy the ready made ones from supermarket.
chicken Caesar salad, it only needs a tiny amount of chicken.

I'm diabetic so always watching my carbs and these are my favourite lunches. They all compliment a good salad.

It doesn't need to be lean. If we have roast chicken on a Sunday, I pick all the leftover meat off and use that in my lunches.

Alternatively I buy a big pack of chicken drumsticks, split into two trays and use different seasonings, and roast them for my lunches in the week. You can do them all plain or the same but I like the variety!
