Low carb lunch ideas

Hey everyone! Teacher here looking for low calorie and low carb lunch ideas please! I’m really short and I’ve put on about a stone and a half since the first lockdown, but I really need to do something about it now as I just feel rubbish. Please inspire me with your recipes ☺️ Ps, I eat most things, I just don’t like tinned tuna 😁

Am just getting back on the keto wagon after a few months "off". Made some mackerel pate to have for lunch at work tomorrow with keto crackers.

Would also recommend chicken Caesar or bacon and avocado salad or, if you have access to a microwave, baked mushrooms stuffed with a little bit of tomato sauce, and mozzarella.

I like having high protein salads. At the start of the week I'll cook some chicken thigh fillets with either Italian or Cajun seasoning, chop them up and keep them in the fridge. Also hard boil some eggs, and slice up peppers and red onions. Sometimes I cook streaky bacon and crumble that up too. And then make a dressing, sometimes a lemony garlicky creamy one, sometimes a Cajun one.

Then each morning assemble a salad with mixed leaves, chicken, some sort of cheese, and some mix of peppers/avocados/tomatoes/cucumbers/onions. Sometimes add bacon or nuts/seeds as well.

I find if I pack it full of delicious high protein things it's really tasty and I don't get hungry very quickly. Plus I'd much rather eat a bunch of chicken and cheese than just leaves Grin
