Vegetarian meal ideas

Right... I've had enough... of being a prisoner to sugar and chocolate, and of how I look.

I'm starting low carb, and whilst I get to grips with all the info, can any vegetarians give me some meal ideas for breakfast, lunch and dinner?

So far today I had a boiled egg for breakfast and a cheese omelette for lunch Confused

I'd be so grateful for some ideas, but none with quorn/fake meat please

Roast some chickpeas with cauliflower florets with olive oil , coriander and garam masala . Have it on a wrap with mango chutney , it's sooooo nice 😀

OK so basically its curries, stir frys, soups etc without the bread/rice/noodles/potatoes. Serve with salad instead.
Lots of herbs/spices for flavour.

Carrot, peas, chick pea and spinach curry with ginger/garlic/cumin/coriander. Chilli if you want.

Veggie chilli (carrots, peppers, red kidney beans, green beans)
Garlic/cumin/paprika/coriander

Stir fry (carrots, mushrooms, peppers, sugar snap peas, tofu etc) with a packet sauce.

Minestrone soup (without the pasta) - broad beans, peas, cannelloni beans, courgette with garlic, herbs, basil and pesto.

Roast med veg (no potatoes) with thyme and rosemary and side of green veg.

Baked cherry tomatoes with red onion, peppers and chick peas. Add feta if you want.

Lunches tend to just be salads (beetroot, cottage cheese, lettuce, houmus etc) or fruit with plain yoghurt.

Lots of Quorn products...but check carb levels as the content between things like sausages can vary from 2g to 8g a sausage. Quorn 'steak' is very low.
