Making a fancy, date night, low carb meal - help!

Need to reduce carb intake, and will happily cut as much as possible from lunches/weekday dinners, but dh and I always have a treat Friday night dinner.

I'll forego the booze, but I still want to make something that feels "nice".

What do you make for a more special meal which still suits the low carb/keto framework?

Oh I've made these before (but also put lots of balsamic glaze inside so I'll have to swap that).

I've a whole cauliflower in the fridge that needs to go, so maybe cauliflower cheese or another side made with it

Cauli mash is nice if you stir through some soft cheese or blue cheese and a little bit of fried shallots.
