Low-carb diets

Can anyone please recommend a book explaining the physiology of processing carbs?

I don't know a book, but there might be articles on Diet Doctor, or under Dr Jason Fung.

it depends how complicated/scientific you want it to be @Daffodilius!

This is a really good book, but probably the most complex . I think it was written for medics.

Otherwise, The Obesity Code, by Dr Jason Fung is a good one, as is Escape the Diet Trap by Dr John Briffa.
