I'm so bored of boring lunches. Ideas please

I've been on Keto for about 7 weeks. As a whole I'm finding it easy and am having very steady losses.
My issue is lunch.
I have to take one to work as in middle of nowhere and I'm getting so bored.
I tend to have a handful of spinach with some kind of protein (fish, egg, cheese) and mayo but I just find it so bland. Before keto I used to have Buddha bowls with grains and sweet potato and lots of flavour so find the new lunches really dull.

Any low carb ways to perk it up at all please?
I also find I use most my carbs if I try to add more greens and salad bits for interest, which is annoying.

Watching with interest as I tend to buy one of M&S’s high protein pots. If I had to bring my own in, I’d probably batch roast various veg such as peppers, courgettes and broccoli and keep in the fridge to add to a portion of fish, meat or cheese. A few nuts and seeds sprinkled on top can add a bit of crunch and variety.

Not sure if this is low enough carb but I used to have one of the following

Roasted veg (peppers, broccoli, courgette, tomatoes, asparagus, green beans etc) with chicken marinaded in harissa or some chilli sauce with feta

Stir fried veggies with chicken marinaded in five spice and edamame beans

Fajita chicken and veg with avocado or feta

Chicken Caesar salad, marinate the chicken and cook or roast one. Anchovies, cucumber, green leaves, full fat dressing, Parmesan shavings, crispy bacon

Cucumber with tuna pate or soft cheese

Chorizo rollitos from M&S (so good!)

Marinate your protein or add spices/seasonings?

Thanks for the ideas. I think I need to start cooking stuff the night before in order to get flavour.

Bit late to this thread but I always cook extra in the evenings and have leftovers for lunch. Both OH and I tend to have lunch at home but the leftovers mean we haven’t just automatically eaten sandwiches for ages.

Is cheese, walnuts and an apple low carb enough?

I wouldn’t eat the apple as too much sugar but cheese, walnuts and avocado, or handful of rocket and with some pumpkin seeds and olive oil would be good.

I have lots of keto soups - I have a little thermos pot so I microwave soup in the morning and it’s still hot at lunch time, cauliflower cheese soup, broccoli and Stilton, squash and coconut with Thai spices and chilli, celeriac and celery soup with curry spices and coconut etc...

I also take leftovers from dinner, or keto cheese scones with cheese and cucumber, or keto seed crackers, or roasted veg with feta, or Greek salad.

I think planning is the key to success with keto lunches!
