Short on time quick low carb meals

Please hit me with your quick low carb recipes. I'm really struggling coming in from work and finding time to cook from scratch low carb family friendly meals.

Me DH and 2 kids 2yo and 5yo. No fussy eaters, allergies or intolerances.

My favourite is to bung a load of veg into a roasting tin with some fish or chicken, cover with some spices and oil and roast in the oven.

That was me a few weeks ago. So what I did was for 4/5 meals was this:

I filled plastic boxes in the fridge with:

  • Coleslaw made with red cabbage, carrot and onion and mayo
  • Feta, olive, tom and cucumber salad
  • Tub grated cheese
  • Homemade bolognese
  • Tub full of washed strawberries, raspberries, blueberries

Monday - Filled a huge red pepper with bolognese threw on grated cheese and shoved in oven

Tues - threw salmon fillets in oven had with a big pile of the coleslaw. For DH added new potatoes...ones in plastic tub with butter and herbs

Wedn - jacket potato with bolognese or I had tuna and mayo already prepped

Thurs - picked up an already roasted chicken on way home had with bag of pre-prepared vegs added roast pots for DH

Fri - from freezer had a portion of butter chicken (diet doctor recipe)

I used sweet potato for me or havr also used lettuce leavrs filled and rolled with bolognese

As MrTumble said, courgetti is great. Throw in some pesto and chicken and some rocket salad. So quick.

Faijitas without the wraps, use lettuce instead.

Chilli or Bolognese without the carbs.

Tuna niçoise using tinned tuna.

I often cook up loads of chicken thighs on the bone at the beginning of the week. Super cheap and really handy to use with salads/veg through the week.
