We have friends staying for 3 weeks who are veggie. When we cook for them it's frequently carb heavy; pasta, rice, potatoes etc. I'm thinking. I can sub out pasta for zero noodles and rice for veggies as I usually would but any suggestions for good veggie meals we can all eat together without me having to do a seperate side?
Halloumi and ratatouille is the only thing I can think of!
