I always fail at LC because of the lack of food options.

What would you suggest for a picky eater with the palate of a 5 year old?

What veg do you eat?

I replace rice in a curry with baby spinach.
I replace rice in a stirfry with thinly sliced sweetheart cabbage.
Pasta in bolegnese with kale.
Potatoes with tinned sweetcorn or sweet potatoes.
I still have bread at lunch as thats my favourite carb.

Start by e.g. 75% rice/25% veg and work your way up over a few weeks.
Pick meals e.g. curry that have a strong suace so you dont' taste the veg, its jsut a suace vehicle.

suace == sauce !!

A lot of egg.
Green leafy vegetables rather than starchier types. (Carrots, peas, sweetcorn, parsnips etc are not on my diet plan).
Avocado
Meat! (And fish!)
If fruit is permitted then berries tend to work out lower gi than bananas, apples, pineapple etc.

It all depends how low carb you need to be.

Go and find the Low Carb Bootcamp topic, and have a look at all the recipes there - there must be something to inspire you there!

But basically:

  • meat/fish/seafood/eggs
  • lots of green, leafy veg and salad (and plenty of other veg - it's really only potatoes, sweet potatoes, beetroot, peas and sweetcorn that are out)
  • cheese, yoghurt, cream

Loads of things to eat!
