New to dieting and have IBS

Constipation variety mostly.
I need to lost half a stone, which isn't much but enough to make my clothes too tight at the mo.
I am interested in going low carb as I know that bread (my downfall) and pasta etc make my IBS much worse. But I'm worried I will never poo again !
My usual daily diet is;
Boiled egg and toast for breakfast
Crisps as snack
Salad with cheese (lettuce, spinach, carrots toms and olives) for lunch
Jacket potato with coleslaw and cheese, or beans and cheese... I love cheese.

I'm not a big meat eater.

Obviously he bread and potatoes and baked beans need to go, but I'm not a recipe type person.. quick easy meals suit my lifestyle.
My weight has started creeping up because I am a terrible late night snacker... doritos and hummus are my poison! I have a glass of red wine each night too (not giving that up!)

Can anyone help me fid substitutions for the spuds and crisps that will keep me going throughout the day and reduce my desire to snack at night?
