Quark Cauliflower cheese

Has any one used Quark to make cauliflower cheese ...on a LC diet and thought this might me a good idea ...now 2 hours till our guests arrive and I have serious self doubt !!😁

I don't think quark tastes very cheesy, to me it tastes more like yogurt, so I think you would need to add real cheese for any flavour, which is defeating point really?

quark tastes a lot like cream cheese but is not melty.
might work if you mix it with other cheese.
