Low carb dinners

Please can someone help me, I'm looking for quick, very low carb dinner ideas, nothing that takes a lot of prep, the quicker and easier the better.
I've been having lean meat or fish or eggs and a small amount of green veg, but it's getting really boring!
What else can I try?

This week I'll be having

  • taco mince stuffed into Peppers and roasted, with avocado
  • roast chicken, with steamed sprouts, Carrots and cauliflower
  • chicken and ratertouli
  • burger in lettuce wrap

That's as far as I've got!

Chicken thighs, oven cooked in 40 minutes, with onions, garlic, tomatoes, peppers and mushrooms. (Hairy Bikers).

Small fillet steak with mushrooms, peas and side salad.

Salmon fillet with ginger, lime and chilli dressing, with a rocket, tomato, mango, red onion and avocado salad - dressed with lime juice and a dash of olive oil.

Any roast dinner without roasties or yorkies.
