Low-carb diets

Would this home made soup be ok?

Getting a bit tired of cold salads for lunch so have decided to make a large pan of soup for work lunches for 2 or 3 days

I boiled the chicken carcass after Sunday lunch, added a knorr chicken stock cube. In the stock I boiled 1/2 a cauliflower, 1/4 of a large swede, 2 medium carrots, a few cabbage leaves and added the lovely bits of chicken that fell off the bones.

Boiled it all up, blended it with salt and pepper and it tastes delicious and has evaporated down to make 2 generous portions.

I have no idea how to calculate the carb count as I didn't weigh the veg first but I chose mostly less carby veg.

Will it be ok?

I'd imagine it would be fine - as you say only the carrots are slightly more carby veg.
