I'm new to paleo (4 weeks in, 10lbs lost) but although I'm really enjoying it and feeling great on it I'm already in a bit of a rut foodwise. Like a lot of people on here I'm very busy juggling a busy job and a hectic family life so I don't want anything that takes too long or is overly complicated or has exotic ingredients (I live in the sticks and the local shops aren't overly well stocked). It's only me on the diet, not the whole family if that makes a difference.
So far my favourites have been:
Breakfast: either leftovers and a piece of fruit or scrambled fruit (basically a failed pancake recipe - I beat an egg and mix it with either half a can of fruit (pears are my favourite) or a banana and then cook in the same way as scrambled eggs. Sounds disgusting but is actually quite yummy)
Lunch: various salads with either tuna, boiled eggs or cold leftovers
Tea: homemade beefburgers (mince mixed with finely chopped onion)
Bolognese (brown the mince then add a can of tomatoes and assorted chopped veg - normally onion, carrot and mushroom). I've served this with the fake courgette spaghetti which worked well.
Other than that I've stuck to various combinations of chicken legs, pork chops and platefuls of every veg known to man.
Does anyone else have any super easy paleo recipes to share?
