Dippy egg is one of the few things I used to really, really miss but instead of boiling I now poach and have with spinach to mop up all the yolk, yum yum, or fry eggs in butter (huzzah!) and dip bits of sausage in it. Delicious.
Re: lunch. I eat at my desk while working as well but take salad - only need one hand for a fork! - or a sort of deli board eg Parma ham, fennel salami, some cubes of cheeses, cucumber sticks, celery, few cherry toms and olives - and pick at that.
Occasionally I'll throw some broccoli, cauli and whatever other green veg is in the fridge into a pan with stock, whizz it down to a really, really thick soup, chuck in a handful of cheddar at the end and take that in a thermos.
Leftovers are the best though, as require no prep the night before. Only good if you have access to a microwave however.
TBH, sounds like even if you just cut out the snacking on toast on the evening it would be an improvement.
I never snack now, honestly.
