Low carb dairy free vegetable dishes

Does anyone have tasty recipes/ideas? I’m getting a bit fed up with plain greens. I’ve made cabbage with caraway from the BBC good food site a lot but am looking for more variety. Dairy free because whenever I eat cheese, cream etc I seem to gain weight

Have you checked out the Bootcamp recipe threads? I'm sure there will be some inspiration there!

But a couple of favourites:

  • celeriac chips: peel celeriac and cut into chips, put in a baking tin and drizzle generously with olive oil, season with salt and pepper, perhaps some chilli flakes if you like, and then roast in a hot oven till nicely browned
  • lemon cabbage: slice/chop white or green cabbage and boil in salted water for around 5 minutes. Drain. In the pan you boiled it, melt a large lump of butter (which doesn't count as dairy), and then gently fry a couple of large shallots till softened. Tip the cabbage back into the pan and stir into the buttery shallots. Add the juice of a lemon, season the whole thing with salt and pepper (white pepper works better in this dish), then cover the pan with a lid and cook gently for another 10-15 minutes.

Roasted broccoli with shallots - I prefer tenderstem broccoli for this - lay all the stems in a baking tray, add a couple or more sliced shallots, season and then drizzle with olive oil. Roast for around 20 minutes

Roasted cauliflower - break up into florets, drizzle with olive oil, season and add a sprinkle of ground cumin. Roast for around 20 minutes.
