We might have something like a cauli rice jambalaya or paella, or egg roll in a bowl, or burgers in a low carb bread roll

Or steak with garlic creamy mushrooms, chilli green beans, roasted tomatoes

Steak with mushrooms in garlic butter, long stemmed broccoli with lemon zest, salad.

Pan fried sea bream with roast mediterranean veg

Cod, haddock or hake steamed with fresh ginger, lime, chilli flakes and spring onions with pak choi tossed in sesame oil and stir fry beansprouts, red and yellow peppers with a few cashews for crunch.

My absolute favourite involves lamb chops or a crown of lamb between two of us. Served with Greek style feta salad in summer, and with spinach and celeriac roasted in goose fat in winter.

Fillet steak with green salad, with cherry tomatoes and avocado ( only worth doing if the avocado really is perfectly light.

Sashimi plus add some green veg for when digestive regularity. Glass of champagne.

Roast duck breast, buttered spinach and roast (unsweetened) rhubarb.

I followed a recipe by Mandy Lee for her instant Dan Dan noodle mix.
Yes, the ingredient list is long. Admittedly, the reason I am a fan of hers is that our tastes coincide, what she calls for is generally what I already have in my cupboard (the only one I lacked was cumin seeds).
The plus side is that you end up with enough for several meals. The sauce mix lasts a week in the fridge or you can portion it and put it in the freezer.
I used “slim pasta” fettuccine and added julienned cucumber. As I had a batch of Mandy Lee’s ultimate Chili oil to hand, drizzled that over too. OMG!!!!

There are lots of recipes for Dan Dan noodles on the web, lots of specifically Keto versions also. I honestly cannot imagine a more delicious, satisfying and orally exciting treat meal.

You can also add extra nut butter or tahini to it and thin it a little with broth or water and make a “gado gado” style salad with lightly blanched vegetables. This instant sauce mix is highly versatile.

If you are up for a cooking challenge that will reward you far more than the effort you’ll put into it (I understand that this is a “high effort” recipe, that’s how good it is!) this is the one.

Keto fajitas here. Pork shoulder or steak fried in strips with lots of garlic, paprika, chilli and other spices. Shredded iceberg lettuce, a small portion of peppers and onions, lots of avocado and sour cream. Is amazing- so satisfying
