Coming to visit for a few days in July what things would be good to do. Just me and a 1yo. Is there a big leisure swimming pool anywhere?

There are quite a few pools across the city Manchester Sport & Leisure gives you access to all pools' timetables.

Also the science & industry museum is well worth a visit.
Manchester Art Gallery is good too, especially the cafe.

Little ones love the baby pool at the Acquatics center on Oxford road (in city centre), has little slides and water sprays. Only downside is parents have to sit in about 2 inches of water
