Just that, really. If I put a friend or DP, will they be recognised as N.O.K. when the time comes by doctors, etc.?

yes - you can put who you like

Next of kin is a totally meaningless phrase. In law, all it means is that if you were intestate, that is you the hospital would have to give your property to if you died. NHS would be better just asking 'who would you like us to contact if there was a problem?', which is what they really mean.

It can be whoever you like.
