Power of attorney-guidance on household expenses please!

I have lasting power of attorney for my dad, who lives at home with my mum. Mum is still fine, touch wood! I usually use the PoA to pay the bills at the bank etc. Mum has asked that I give her money from Dad's account to pay for their food, which he is happy to do.

I would like some advice on what is the best way to do this, would taking it out in cash weekly and noting it in his expenses book that I keep be sufficient if the Court of Protection asked to see his accounts? He did give my mum cash weekly prior to the PoA but as it was cash was not documented. I am sole POA btw.
