Trying to be more thoughtful about diet and lean into Mediterranean with lean protein/colourful fruit & veg/wholegrains etc. I would love to hear your go-tos for weeknight meals that are healthy and yummy but not a big faff to make?

Pesto wholegrain fusilli with chicken and broccoli
Salmon with cous cous and roasted tomatoes
Baked aubergine with spiced lentils and yogurt
Chili con carne with wholegrain rice
